A family classic and an Italian-American staple. Macaroni and Ricotta is easy to make, cheap, and can feed a lot of people! It’s one of my favorite pasta recipes.
pasta with sausage & broccoli rabe
There’s veg in here, so it’s a healthy dish—at least that’s what I tell myself. Browned, crumbled sausage pairs with fresh broccoli rabe (cooked perfectly to avoid bitterness) and is tossed with a pasta of your choice. It’s all-of-the-things and a delicious meal on it’s own.
chicken milanese
Crispy chicken cutlets pair with a refreshing salad complete with pasta and fresh mozzarella chunks. It’s a great way to use up leftovers, too!
bowties & broccoli
A comfort classic with veggies…so it’s healthy, am I right? Garlic and oil give rough chopped broccoli a big warm hug and then combine with al dente pasta and grated cheese for a delicious finish. Bowties and broccoli are perfect on their own, with a chicken cutlet, or leftover as a cold pasta salad!

Fun for Cinco de Mayo…or any day, because hello…it’s a fresh squeezed margarita and homemade guacamole.
zucchini parmesan
This zucchini parmesan is so tasty and so satisfying, and…it gets better every time you reheat it. Zucchini is pretty easy to fry, too, and doesn’t make too much of a mess! It’s a win/win.
grilled steak with arugula pasta salad
I love steak nights because half of the meal is easy to clean up (and quick to make!). Add in a fresh (chilled) salad with sweet, caramelized onions, a pop of vinegar based dressing, and a little bit of pasta, and you’ve got tons of flavors alongside a completely balanced meal. Easy, check. Delicious, check. New dinner idea, check.

My brother found this stuffed chicken recipe in a Long Island, NY newspaper somewhere back in the 1990s and we’ve been enjoying it ever since. I love these cheesy chicken roll-ups best over a wide egg noodle but you can pair it with sautéed green beans, or a side caesar salad and mini garlic toasts like I did, if you’re keeping carbs low. I wish I knew the original creator for credit but a very big shout out to the 90s for providing us with the best of everything.

Incredible at-home pizza that is made with pizza shop dough (I’ve made my own dough before and just don’t like the texture) with easy, but specific step by step instructions - just like my Nana used to make. You’ll crave it from week to week!
