chicken broccoli rabe sandwich
Lightly toasted garlic bread is filled with fresh chicken cutlets, broccoli rabe, and fresh mozzarella for a warm, crispy, melty sandwich. Easy but delicious…make a bunch and cut them into smaller pieces for a party snack or appetizer!
Ingredients:
Fresh loaf of bread, preferably a seeded baguette
Butter & olive oil
Oregano and garlic powder
Chicken cutlets
Broccoli rabe, sautéed
Fresh mozzarella sliced
Instructions:
Slice bread open, layer with salted butter, a drizzle of olive oil, oregano, and garlic powder.
Toast lightly.
Layer slices of mozzarella on the bottom, top with chicken cutlet, then broccoli rabe.
If your chicken cutlets are fried and hot, there’s no need to melt the mozzarella first.
If you’re reusing the cutlets and they’re not quite hot, you can melt the mozzarella directly on the bread in a toaster oven.
