chicken milanese
Crispy chicken cutlets pair with a refreshing salad complete with pasta and fresh mozzarella chunks. It’s a great way to use up leftovers, too!
stuffed chicken breasts
My brother found this stuffed chicken recipe in a Long Island, NY newspaper somewhere back in the 1990s and we’ve been enjoying it ever since. I love these cheesy chicken roll-ups best over a wide egg noodle but you can pair it with sautéed green beans, or a side caesar salad and mini garlic toasts like I did, if you’re keeping carbs low. I wish I knew the original creator for credit but a very big shout out to the 90s for providing us with the best of everything.
chicken broccoli rabe sandwich
Lightly toasted garlic bread is filled with fresh chicken cutlets, broccoli rabe, and fresh mozzarella for a warm, crispy, melty sandwich. Easy but delicious…make a bunch and cut them into smaller pieces for a party snack or appetizer!
breaded chicken cutlets
Crispy, tasty fried chicken cutlets that’ll feed a large crew of people or that can be used in various other recipes, once they’re cooked. A labor of love that’ll temporarily stink up your house…but we think they’re worth it.
cavatappi caprese with chicken
Bursting with flavor thanks to fresh basil, tomatoes, and garlic. Melted cheese bombs make this pasta a comfort food classic that is perfect hot, warm, or cold as an entree or a side dish, even for a BBQ! A versatile and delicious recipe.
