chicken milanese
Crispy chicken cutlets pair with a refreshing salad complete with pasta and fresh mozzarella chunks. It’s a great way to use up leftovers, too!
grilled steak with arugula pasta salad
I love steak nights because half of the meal is easy to clean up (and quick to make!). Add in a fresh (chilled) salad with sweet, caramelized onions, a pop of vinegar based dressing, and a little bit of pasta, and you’ve got tons of flavors alongside a completely balanced meal. Easy, check. Delicious, check. New dinner idea, check.
stuffed chicken breasts
My brother found this stuffed chicken recipe in a Long Island, NY newspaper somewhere back in the 1990s and we’ve been enjoying it ever since. I love these cheesy chicken roll-ups best over a wide egg noodle but you can pair it with sautéed green beans, or a side caesar salad and mini garlic toasts like I did, if you’re keeping carbs low. I wish I knew the original creator for credit but a very big shout out to the 90s for providing us with the best of everything.
