sautéed broccoli rabe
When done correctly, this beautiful veggie has a perfect bite without any bitterness. Just a few steps will yield you a perfect side dish or topper for a sandwich (stay tuned.)
Ingredients:
1 bunch broccoli rabe
Olive oil
3 cloves garlic, smashed
Salt, pepper, red pepper flake
Ice bath on the side!
Instructions:
Snip off the larger parts of the broccoli rabe stems (you won’t use these for the rest of this recipe but you could make a pesto out of it if you’re feeling adventurous).
Bring large pot of water to a boil, add broccoli rabe, and blanch for one minute only.
Remove after one minute and add to large bowl of mostly ice and water.
Remove from ice bath after about 30 seconds, and strain.
Smash three cloves of garlic and sauté in about 4 tablespoons olive oil until lightly brown.
Add broccoli rabe to pan and season with salt, pepper, and red chili flake.
Cook for just 1-2 minutes until all is incorporated, making sure the garlic doesn’t burn.
Use as a side dish or as a sandwich topper!
