pasta with sausage & broccoli rabe
There’s veg in here, so it’s a healthy dish—at least that’s what I tell myself. Browned, crumbled sausage pairs with fresh broccoli rabe (cooked perfectly to avoid bitterness) and is tossed with a pasta of your choice. It’s all-of-the-things and a delicious meal on it’s own.
bowties & broccoli
A comfort classic with veggies…so it’s healthy, am I right? Garlic and oil give rough chopped broccoli a big warm hug and then combine with al dente pasta and grated cheese for a delicious finish. Bowties and broccoli are perfect on their own, with a chicken cutlet, or leftover as a cold pasta salad!
zucchini parmesan
This zucchini parmesan is so tasty and so satisfying, and…it gets better every time you reheat it. Zucchini is pretty easy to fry, too, and doesn’t make too much of a mess! It’s a win/win.
sautéed green beans
Easy, delicious green beans are done in under fifteen minutes. They’re slightly crisp with just enough garlic and salt for the perfect pop of flavor that won’t overpower whatever else you’re serving them with. Everyone will love these!
sautéed broccoli rabe
When done correctly, broccoli rabe is absolutely delicious without any bitterness. Just a few steps will yield you a perfect vegetable side dish or topper for a sandwich.

It’s like I’m back in Rome at the Hotel Victoria rooftop restaurant but not quite. I have dreams about a zucchini appetizer I had there back in 2015, so I made a dupe.
