margaritas & guacamole

Fun for Cinco de Mayo…or any day, because hello…it’s a fresh squeezed margarita and homemade guacamole. You can adjust the citrus and sweetness levels of your margarita (by increasing or decreasing your lemons/limes and agave used), as well as the cilantro and red onion factor of the guacamole. I also 10/10 recommend Mi Nina’s Jalapeno Agave Tortilla Chips because they are…DELICIOUSLY addicting with the slightest hints of spicy jalapeno and sweet agave. They match the vibes of a margarita and guacamole perfectly!

Margarita Ingredients:
Makes 1 batch or about 8 margaritas

4 juicy lemons

4-6 juicy limes

1/2 large orange

Agave

Tequila

Blood orange liqueur is my favorite, but if you prefer or can’t find it, triple sec

Ice

Margarita Instructions:

Juice all of the lemons, limes, orange into a large measuring glass. (I use this Cuisinart Citrus Juicer and the price is quite literally worth even just one batch of margaritas, rather than doing them by hand. If you’re not in a rush or not concerned with early onset arthritis, by hand is just fine.)

Strain any residual pulp if you’re a no pulp fan like myself.

However much citrus you end up with, add the same amount of water, stir to combine.

Fill cocktail shaker with ice.

1-1.5 oz tequila - I used @espolontequila.

.5 oz (blood) orange liquor - I used @solerno_bloodorange but hubs likes @grandmarnierusa.

Agave to taste (I do a little less than a tablespoon).

Shakeeee what your mama gave ya.

Pour into a glass, garnish with lime, andddd enjoy.

Guacamole Ingredients:
Makes four to six servings

2 large, ripe avocadoes

1 tbsp finely chopped red onion

1 tbsp finely chopped cilantro

4 tbsp lime juice + more

Salt, garlic powder

Mortar and pestle is nice but necessary

Guacamole Instructions:

Scoop out the flesh of both avocadoes.

Chop red onion fine (you can add more than a tbsp, I just don’t like strong red onion flavor.)

Rinse cilantro thoroughly, pat dry, and then chop about a tablespoon, fine.

Add four tablespoons of fresh squeezed lime juice, and sprinkle on some salt (at least a teaspoon or two, but to taste), and some garlic powder, also to taste.

Mash everything together in the same bowl.

Taste it and adjust! If it’s bland, add a little more salt and a decent amount of extra lime juice.

My Mexican Sista/Friend said when you add lime juice to anything, add some more, because it’s never enough! Pair with Mi Nina tortilla chips (or any kind) but those really kick it up a notch.
